Labor-Inducing Eggplant Parmesan Recipe

This recipe has been on my mind for some time. Eggplant Parmesan is rumored to be a 40-week pregnant lady’s best friend, and I personally know some genuine “eggplant babies!” (Babies who were born 48 hours after mom ate this dish).  There’s a famed restaurant in Atlanta that even has a baby book an expectant mother can sign to receive a gift certificate and eggplant baby onesie if the dish works to help deliver her baby.  I personally went to that same restaurant when I was pregnant with both Red and Scarlett. With Red, I wasn’t “pregnant enough” to have it “work,” but I experienced 4 hours of contractions after eating it with Scarlett.  Sadly, she didn’t end up being an “eggplant baby.”

Frying Eggplant Slices is easy!Regardless of the urban legend that this recipe induces labor, it’s absolutely delicious.  I’ve adapted the restaurant recipe to a home chef’s ability and scaled down the entire-dining-room portions to something your family can share.  If you are 39-40 weeks pregnant and are looking for a home-cooked eggplant parmesan, look no further.  Keep in mind that’ I’m not a doctor, and while the urban legend states this recipe will induce labor, it’s all fun and games and something to enjoy. It’s not a medical fact!!  This adapted eggplant parmesan recipe is very easy to make, just a little time-consuming.  I made sure to prep it one afternoon while Red was playing, and then just 25 minutes before dinner, popped it in the oven.  Voila! A piping hot dinner done during witching hour…

    I had a hard time picking one because everything sounds good. The french onion scalloped potatoes sounds like a great side dish. I also think the Rajun Cajun Jambalaya and Tomato Pasta Florentine soup look good!

    I love scalloped potatoes so I would go with French Onion Scalloped Potatoes. They have a lot of other great recipes I’d like to try as well!

    Caribbean Lime Coolers because I love lime cookies…. Yummy recipes on that website. The Tomato Pasta Florentine Soup sounds good as well and also an easy to make recipe.

    The Speedy Salsa-Chicken Quesadillas look really good to me! We have a quesadilla maker that I haven’t used in a while and this looks like a great recipe.

    Oh so many of their recipes look so good! I think I would want to try their Thai Beef with Fresh Carrot Salad first! Looks so good!

    I would love to make the Skillet Tomato Paella because it looks so delicious. The recipe looks pretty easy to make and well worth the absolutely scrumptious flavor.

    I love Italian food. So, I would love to try Oven Parmesan Chicken with Penne Marinara, because it combines 2 things that I love pasta and chicken.
