Summer Watermelon Mojito

If you’re like me, I’m looking for something nice and relaxing after Red goes to bed.  In the winter, it’s a brownie. In the spring, I’ll go for a glass of wine.  In the summer, I was something light, special and bubbly.  Hubs and I went on a muddling streak this week and invented our version of the watermelon mojito just in time for summer! It features the usual mint and light rum, and fabulous muddled watermelon chunks.
Since starting on our clean eating campaign, Hubs and I are saving LOTS of money by growing our own herbs and other veggies in our first ever garden.  It’s something I’ve always wanted to do, and our purchased herbs are the same price as if we had purchased  those herbs in the grocery one time. All other harvests are freeeeee.  And we like free.  Also, non-GMO and no pesticides, either.  So our  homegrown mint is featured in the recipe!  If you’re super prolific in the garden, you might grow your own watermelons. Hold your horses, says me; one garden-step at a time.  We bought our organic melon 🙂 Now, on to the good stuff.

Watermelon Mojito
A loose fist full of homegrown mint leaves
1 oz lime juice (you can squeeze your own if you like!)
1 oz REAL homemade simple syrup (1.5-2 oz if using the bottled stuff)
3 to 4, 1″ cubes watermelon, chilled or lightly frozen
2 oz light rum (silver)
Ice Cubes
2 oz club soda or soda water

Combine mint through watermelon cubes in a large glass.  MUDDLE together, mashing the mint against the melon. Add the light rum (we are slowly working through a GREAT bottle of caribbean rum from our baby moon).   Now, fill a 16oz cup to the very brim with ice.  Toss  and mix well.  Pour into presentation cup and top with club soda.   (Makes 1 mojito).  Now, leave a comment below telling me about your favorite summer drink, or if you tried the mojito!
