30 Minute Zucchini & Feta Frittata

Sometimes, I don’t want to cook.  And I really don’t want to pick out what’s for dinner.  I’d end up ordering pizza and take out all the time!  Ya’ll know by now that we are avid eMeals users, and this frittata recipe from the 30 minute meal plan was so fast, so easy and so “fancy” feeling that I wanted to share it with you.  It truly was a 30 minute process, and even made good leftovers.  See if your family will like it!  Just to let you know, there are a few affiliate links in here, and if you do click to try eMeals FREE for two weeks, I get a few bucks when you sign up.  Thanks for supporting me!
Zucchini and Feta Mini Frittatas
Prep and Cook Time: 30 minutes total

1 medium zucchini
1 Tsp Olive Oil
1/2 small vidalia onion, finely chopped
1 clove garlic
4 large eggs, lightly beaten
1/4 tsp each salt and pepper
1/3 cup crumbled feta cheese

1. Preheat oven to 350 degrees

2. Cut Zucchini in half lengthwise.  Cut crosswise into thin slices.

3. Cook zucchini, garlic and onion in hot oil over medium-high heat in a skillet.  Cook 5 minutes or until tender, stirring occasionally.

4. Combine eggs, veggies, salt and pepper in a bowl.

5. Spoon into 2 (8oz) individual baking dishes or casseroles coated with cooking spray. Top with cheeses.

6.  Bake 15 minutes or until center is set and tops are a golden brown.
