Black Bean Burgers (Bingus)

Looking for some clean eats for your new year, but missing that comfort food like burgers and fries? I have you covered with Black Bean Burgers! (And my personal oven fries!)
You may be wondering what “Bingus” is… when I was writing out our no-brainer meal plan on our menu board, I was writing in hasty cursive when Hubs walked up behind me, asking, “What the heck is Black Bean Bingus?!”  He was so serious in his query, I almost died in laughter from his interpretation of Black Bean Burgers.  It’s still making me roll off the couch… An LMFAO, if you will.  Anyway, the recipe was SOOOOO good (and Hubs is a total carnivore) that I’m sharing it with you!
Black Bean Burgers
You can omit the salsa or change up the cheese to your liking. The first time we made these, we used leftover shredded taco lettuce instead of leaf lettuce, and it was still as tasty as it could be.
And yes, seven years later, we are STILL LAUGHING about the BINGUS!

Black Bean Burgers

Ingredients

  • 3 15oz cans black beans, drained and rinsed
  • 2 cloves garlic
  • 1 cup finely chopped red bell pepper
  • 1/2 cup whole wheat panko breadcrumbs
  • 3 Tablespoons fresh chopped cilantro
  • 1 large egg, lightly beaten
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 Tablespoon olive oil, divided
  • 6 slices reduced-fat pepper Jack cheese
  • 6 whole wheat hamburger buns
  • 1.5 cups refrigerated fresh salsa

Instructions

  • Combine 2 cans black beans and garlic in a food processor.
  • Cover and pulse until smooth, adding 1 to 2 tablespoons water if necessary.
  • Coarsely mash remaining 1 can of beans.
  • Combine pureed beans, mashed beans, bell pepper, breadcrumbs, cilantro, egg, salt and pepper in a large bowl, mixing well.
  • Shape mixture into 6 equal patties.
  • Heat ½ tablespoon oil in a large nonstick skillet over medium heat.
  • Add 3 patties to pan; cook 5 to 6 minutes per side or until browned.
  • Top each patty with 1 slice cheese during last 1 minute of cooking time.
  • Repeat procedure with remaining oil, patties and cheese.
  • Place 1 patty on bottom half of each bun; add salsa and bun tops.
