Butternut Squash and Apple Harvest Soup

Prep 20 min, Cook 40 min, Total Time: 1 hour
Serves 4-5 people

Ingredients
1 tablespoons unsalted butter
2 tablespoons good olive oil
2 cups chopped yellow onions (1.5 large)
1/2 of one large butternut squash
2 large, sweet apples, such as Gala or Fuji
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1 cup water
1.5 cups fresh apple cider

Directions
In a large stock pot, melt the butter and olive oil and onions together over low heat for 15 minutes, until the onions are tender and scented. Stir occasionally, making sure no onions are sticking to the bottom of the pot.

While the onions cook, peel the squash, removing all the seeds. Cut the squash into 2″ chunks. Peel and core the apples. Cut into chunks.

Add your squash, apples, salt, pepper, and water to the pot. Bring to a boil, cover, and then simmer for 30 minutes.  The squash and apples will be soft and easily pierced.  In turn, spoon the “soup” mash into a food processor until it is smooth.  Process the entire batch and put back into the stock pot.

Add the apple cider and enough water to make the soup the consistency you like; it should be slightly sweet and quite thick. Check the salt and pepper and serve hot with lots of crusty bread.

    This looks so yummy. I like the idea of using apple cider to get the consistency you want. I would definitely serve with a piece of chewy baguette. YUM!

    I love this time of the year when the weather gets cold. I eat so much more soup because I just can’t make myself eat them when its hot outside. This looks delicious.

    I’m not sure why, but I’ve never cooked with butternut squash before. I love the taste though! I’ll have to branch out of my comfort zone to give this recipe a try. I bet my whole family would enjoy it!
