Cowboy Caviar; a Tailgating Recipe

 It’s football season! Chase and I have a long history of rooting for the Dawgs, since both of us hold a degree from the school (Chase: Bachelors; Me: MFA).  We’ve been tailgating together since I was in grad school, and with my tiny apartment being just a stone’s throw away from the stadium, we were regulars between the hedges.  Now that Red is with us, it’s been harder to pull all-day events in the blazing Athens sun, so we tailgate at the house, trying to get lots of friends over to watch the game when we can manage to host.  Despite less time on the North Campus greens, we’ve managed to keep up our tailgating style, with lots of munchies, themed dinnerware and tasty drinks.
This season, we’ve continued to tailgate at the house, but have Red’s very FIRST Athens home game scheduled for a family trip in 2014.  We’ll be sure to pack the red wagon with plenty of water, games, and snacks to get us to game time.  One of my favorite tailgate snacks to share at home and on the road is my Cowboy Caviar.  This dip is crammed with fresh veggies, seasonings and tons of protein but masquerades as the most savory, tangy junk food you’ve ever tasted!  This recipe makes a huge bowl, but it’s always gone in just a few hours.  Dive in with Blue Corn Tortilla chips, pita, or anything else that catches your fancy. Cowboy Caviar Tailgating Recipe

The Best Tailgating Cowboy Caviar Recipe - no need to refrigerate!

Cowboy Caviar

... a southern tailgating appetizer staple.
Servings: 10 people

Ingredients

  • 1 15.5 ounce can black beans drained and rinsed
  • 1 15.5 ounce can black-eyed peas drained well
  • 1 14.5 ounce can diced tomatoes drained well
  • 2 cups frozen corn kernels thawed
  • 1/2 medium vidalia onion chopped
  • 1/4 green bell pepper finely chopped
  • 1/2 teaspoon garlic salt
  • 1 cup Italian salad dressing
  • 3/4 cup well chopped cilantro
  • 1 bag blue corn tortilla chips for dipping

Instructions

  • Mix beans, peas, tomatoes, corn, onion, bell pepper, and jalapeno peppers in a large bowl. 
  • Season with garlic salt. 
  • Add dressing and cilantro; toss to coat.
  • Refrigerate for 20 minutes or until ready to serve.  This step is important, as it allows the black beans to absorb the other flavors and keep this dish kickin'! 
  • **Packed in tupperware, this dish is safe to stay at room temperature all day, and keeps very well at tailgates!**

Tailgating Drinks, Family Style

To add to the spirit of the Black and Red Dawg nation, I picked up a bottle of Pomegranate Italian Soda, too.  The brilliant color of the bubbly drink is super fun for kids, and if you are partying with adults, feel free to add a splash of your favorite adult liquor and a squeeze of lime!  I served up the soda on it’s own with fun themed paper straws and UGA napkins that my tailgate guests always love.

    I have a hard time making it out their produce section before blowing my budget…so lots of fresh fruits & veggies. If I have any money left I’ll stop by the cheese counter and the bulk bins.

    I’ve developed a few favs, but I’m always on the lookout for their sales, esp flash sales, coupons, etc. I love everything but most often buy dairy products, organic produce, organic flours, lentils, chickpeas.

    I love Halloween and hanging with neighbor families. Its one day during the year that brings people out to our street to hang out and hand out candy together.

    I love their 365 fruit bars for my son and then of course my personal favorite Kale Superfood Salad from the cold bar. Best way to eat kale ever!

    I haven’t! We’re Costco shoppers, so that may be why. But one of my Kroger’s stocks UGA mustard, chips and other things I’ve never seen!
