Make your Pancakes Fluffier

Pancakes are usually a weekend morning treat for us – more time to prep, and more time to enjoy!  Red never discriminates between waffles or pancakes, and always eats more than his fair share.  (Don’t worry, Hubs – you know I’ll always make extra!) 🙂
In order to get the fluffiest pancakes I possibly can, I add two simple pantry ingredients after I whip up my batter.  It doesn’t make any difference in whether or not you are making pancakes or waffles, this combination perks up any batch. Simply add to your mixing bowl and fold gently into your batter.  

1.5 teaspoons of Baking Soda
1 Tablespoon of Lemon Juice
** If you’re worried about the added tang from the lemon, it’s very mild and can be balanced with 1 Tbs of sugar**

These ingredients create a simple chemical reaction, causing a foaming that you can fold into your batter and toss on the griddle.  Voila! Cook per your normal instructions, and your breakfast pastries are fluffier than ever before!

    Would the lemon juice influence how sweet the pancakes would be?
    Do you add some extra sugar?

    I don’t notice the extra tang, but Hubs does like to add some sugar to the mix. Good catch – I’ll edit it!
