This week, I cooked up a slow cooker wonder. A NO prep, 4 hour deliciousness that we shared after a cold and rainy election day. It makes me giggle to think that I gave the chicken a very political name,: but I’ll refrain from sharing it to keep the territory neutral. Instead, I’ll call it Stove Pot Chicken.
Slow Cooker Stuffing Chicken:
4 chicken breasts
1 (6oz) box Stove Top Stuffing ( I used lower sodium chicken)
1/2 c low fat sour cream
1 can condensed cream of chicken soup
3/4c. chicken broth
I always like to use a Slow Cooker Liner when I use my crock pot – it makes cleanup such a snap Hubs usually does it before I can even get there! Pour the broth in first, and lay your chicken breasts on the bottom, preferably not touching.
Pour the Stove Top mix on top of the chicken breasts
Mix the soup and sour cream mix together well and dollop all over the stove top mix.
Cook on low for 4 hours, or until your chicken is done. Don’t be afraid to check on it once in a while to add more broth – my crock pot tends to cook hotter than others, so I added a tablespoon or two over the cook time.
Serve nice and hot – no need for a side dish, but some wilted spinach would be fabulous. This also warms well in the microwave the next day. We’ll be making this a LOT!
